Creamy Dilly Cucumber Bean Salad

I'm still in salad mode while the weather stays nice. I love salads of all  kinds, and I love trying new things! If you missed them, check out my recipes for Greek Quinoa SaladTaco Bean Salad & Cranberry Arborio Salad.

In the past few weeks the neighbours' garden has had a surplus of cucumbers. First of all I'd like to say this makes me sad & sentimental as we have not found the time for our garden over the past two summers. I loved my garden. I really wanted to have a small one this year but there are just not enough hours in the day with my little army of boys around here. My hope is that next summer the two older boys will be excited & helpful with a little garden. But I digress, I'd like to thank my neighbours for growing too much and sharing. It also makes me very happy to have fresh produce from their lovely garden and I love the inspiration for new recipes to use these fresh veggies!

Summer Salads Series: Cranberry Arborio

This salad is not as quick to make as the last, but I assure you, it's worth the long ingredient list and the time to prepare! I've been trialing the recipes I post on my hubby and baby (the other boys won't eat these types of salads despite persistence on my part. This recipe was approved (hubby even took seconds!). 

For this one, the ingredients all get combined and stirred. 

Simple.

Get ready!  This one is delicious!  I was really craving something Mexican-ish last night, and went digging through the fridge and cupboards.  The results, YUM!


I'm all about quick and easy when it comes to food prep... and this one took about 6 minutes from start to finish.  We'll be having this again!

Summer Salads Series: Greek Quinoa Salad

I am all about salads for summertime.  I get easily bored of the same foods, and I get the food blahs quite often.  In the summer months, I find more motivation to make new things, and I'm not a by the book kind of cook.  I am a "what do I have on hand" kind.  This Victoria Day weekend was our first BBQ of the year, and I was inspired to create a salad for the occasion (and using on hand items from my fridge!)

This salad is easy to make.  The most taxing part is waiting for the quinoa to cook!  Or maybe the veggie slicing... either way, it only took about 4 minutes to throw together mix and chill.  That's it.  Ready to serve.
