{Gluten Free} Pineapple UpsideDown Cake

Earlier this week I was at a lunch play date and the host (aka. a wonderful BFF) absolutely spoiled us with the perfect, summery dessert! And to boot, she made it gluten free!! (This is when you KNOW its true love, when she never lets me go without the amazing yumminess!!)

I could hardly wait for an excuse to recreate this divine little cake, so I didn't! I made it the following evening for dessert! What a hit! Its moist, perfect, delicious and so crazy easy to make. Its the perfect potluck dessert, too... just be prepared for the invitations to come rolling in once you share this with your friends!








Gluten Free Pineapple UpsideDown Cake

Ingredients

1 can sliced pineapple in juice (save juice)
1/2 jar maraschino cherries
1/2 c. brown sugar
1 gluten free vanilla cake mix



Make make batter per directions. I substituted half of the water it called for with the leftover pineapple juice (saving just a little) & wow! What a good decision!!





In a 9x13in glass pan, arrange pineapple slices and cherries. Drizzle that little bit of leftover pineapple juice over the fruit, and sprinkle the brown sugar over evenly. Cover with cake batter. Bake per cake instructions, keeping watch on the cake to just slightly brown on top.










And that's a wrap! Let the cake cool before cutting and serving. I did not try to flip the cake out, but the pieces looked perfect with served!
